Prawns changing colour in the pan

I just love the way they start off such a glorious blue and turn so pink, so quickly. It's like magic and never fails to fascinate me. You can see them just starting to turn pink at their tails. They're in the pan in a bit of olive oil and lots of chopped ginger and garlic.
